Finishing a dish with extra virgin olive oil means more than adding fat. It is an aromatic decision. A carefully chosen drizzle can brighten a soup, connect the flavours in rice, deepen grilled meat or perfume fresh fruit. Because the oil goes on at the end, its aroma, bitterness and pungency remain especially noticeable. It therefore deserves the same attention as the principal ingredient. Spain produces oils with markedly different personalities, and one bottle cannot be perfect for every purpose. The most useful choice supports the recipe’s intensity, texture and temperature while allowing the original ingredients to remain clear. A finishing oil should complete the food rather than speak over it.
