Spain keeps changing, and for the better. The Premium EVOO sector has brands and people who understand you cannot be just another in the group. If you’re not different, you simply don’t exist. Isbilya is a clear example of that. When we met last year, almost a year ago now, we were grateful they wanted to meet us. Because there is a before and after Isbilya. Their vision, that of siblings Teresa Martínez and Ángel Martínez, has little to do with what Spanish EVOO producers normally have. Much more traditional, conventional in how they act and with a more or less obvious mission: sell the season’s oil. Theirs is to stand out by doing things differently and without questioning why they can be done differently. They do them the way they want, period. Nonconformists and disruptive

Even if you want to, differentiating yourself is not easy, and even less so if you don’t show why you really are different. Isbilya doesn’t want to be another brand on the market, and it’s not satisfied with making, by the way, an excellent extra virgin olive oil (EVOO) from the varieties sikitita and koroneiki; they want to show the world that you can do things differently by questioning everything that came before and achieving excellent results. That’s why they don’t see the countryside as a traditional sector, but as an opportunity to bring innovation to improve harvesting and subsequent oil production processes. That obsession with improving and innovating delights us, because it motivates us and makes us better, and of course, more demanding with the brands that want to work with us. One of the characteristics that unites us is their transparency in how they work. Those values we share make it very easy to recommend their oils. Their honesty makes us understand what it costs them to produce their EVOOs, and makes us value them even more. Not to mention that they want to stand by the consumer, tirelessly informing them how to detect fraud and what they should know about this precious Spanish gastronomic treasure. Sikitita Excellence Oil

Sikitita is a variety that comes from two of the most important varieties in Spain, arbequina and picual, achieving a perfect balance between these two types of oils. For discerning and sensitive palates that desire more sophisticated flavors with a spicy touch. Ideal used raw and also to accompany any dish, as it enhances flavor and improves texture. Sikitita is a very limited and delicate variety that produces extraordinarily aromatic oils. The Excellence range is the top line — exclusive, Château philosophy. Very limited productions, with an exclusive final result. Tasting notes:
  • Color: Green
  • On the nose it shows a high intensity of fruitiness with notes of leaf and grass; tomato is also perceived along with an interesting combination of aromatic herbs.
  • On the palate it is bitter and pungent of medium intensity, with certain nuances that evoke almond and even banana.
  • Pairing at Made in Spain Gourmet, we recommend it with poultry, rice dishes since it enhances the flavors of the other ingredients. Ideal for dressing green salads and steamed vegetables.

Koroneiki Excellence Oil

Koroneiki is a variety of Greek origin and provides intense, powerful oils with a lot of personality. Ideal used raw and also to accompany any dish, as it enhances flavor and improves texture. Koroneiki is a variety not widely grown in Spain and produces oils with powerful and bitter flavors. Tasting notes:
  • Color: Lemon green
  • A complex oil on the nose with high-intensity green attributes combining notes of leaf and freshly cut grass.
  • Bitter and pungent in balance on the palate. Highlights include the presence of nuts, especially walnut, and vegetal notes via the retronasal route with a high final persistence.
  • For palates that love powerful and peppery flavors, seeking an explosion of intense greenness in the mouth.
