It’s not a trend, not empty marketing, and it’s not a concept reserved for experts. Polyphenols are, quite simply, one of the main reasons EVOO is one of the healthiest and most valuable foods in our diet. Polyphenols are natural antioxidant compounds that occur naturally in the olive. They are responsible for many of the healthy properties of extra virgin olive oil and also contribute to part of its sensory character. Among their best-known benefits are: They help protect cells from oxidative damage They contribute to cardiovascular health They help reduce inflammation They protect LDL cholesterol from oxidation They are associated with healthy diets such as the Mediterranean Diet In fact, the European Food Safety Authority (EFSA) officially recognizes that olive oil polyphenols contribute to the protection of blood lipids (fats) from oxidative damage, provided the oil meets certain levels. That an oil is “extra virgin” does not automatically mean it has a high polyphenol content. There are serviceable, pleasant oils intended for basic consumption… and then there are high-expression EVOOs, the ones that truly make a difference. Factors that directly influence polyphenols: Olive variety Harvest time (the earlier, the more polyphenols) Climate and soil Extraction method Time between harvest and milling A commercial EVOO can range around 150–300 mg/kg of polyphenols. And here a well-known example comes into play. The case of Graza and the U.S. market Brands like Graza, very popular in the U.S., have communicated the idea of fresh, modern, healthy EVOO very well. In many cases, their oils at best reach figures close to 300 mg/kg of polyphenols, which is fine and serves their purpose. But here is the difference.
