The Sikitita Olive: Andalusia's New Gem That's Conquering the World

The Sikitita Olive: Andalusia’s New Gem Winning Over the World

In the world of extra virgin olive oil, not everything is centuries-old tradition. There is also well-done innovation, respect for origin and a look to the future. And that’s where the Sikitita olive appears, a young variety already considered one of the most gourmet and surprising in the Spanish olive oil scene. Andalusia, the land of olives par excellence, never stops reinventing itself. And the Sikitita is clear proof that when knowledge, research and a passion for the land come together, extraordinary things are born. At Made in Spain Gourmet we believe in projects that look to the future without losing their soul.

What is the Sikitita olive?

The Sikitita is a relatively recent variety, the result of Spanish agronomic research. It was born from the natural crossing of Picual and Arbequina, inheriting the best of both. From Picual it takes structure, stability and power. From Arbequina, elegance, aromas and smoothness. The result is a small olive —hence its name— but with a truly extraordinary aromatic and sensory potential.

Where is Sikitita grown?

Sikitita has its heart in Andalusia, especially in:
  • Seville
  • Córdoba
It is in these provinces that it has found the perfect balance between climate, soil and know‑how. It has gradually been introduced to other olive-growing areas, but it remains a variety closely linked to the south, to Andalusian light and to a very careful approach to the modern olive grove. It is not a mass-produced olive. And that is part of its value.

What is an Sikitita EVOO like?

The Sikitita extra virgin olive oil is simply spectacular. We are facing an oil that is very aromatic, complex and elegant, meant to be enjoyed raw. Visually it usually shows an intense, bright green, a clear sign of early-harvest fruit and maximum freshness. On the nose it is a controlled explosion: freshly cut grass, green tomato, apple, fresh almond, floral notes and a very elegant sweet background. On the palate it is balanced, with a medium-high fruitiness, a fine bitterness and a progressive peppery note, nothing aggressive. Everything is perfectly integrated. It is a long, silky and persistent oil that invites you to return.

General characteristics of Sikitita EVOO

Sikitita stands out for a very uncommon combination:
  • Great aromatic complexity
  • Excellent balance between sweetness, bitterness and pungency
  • High content of polyphenols
  • Very good stability
  • Healthy and easily digestible profile
It is an oil designed for discerning palates, for those who seek something different but meaningful. It does not aim to impress by sheer power, but by harmony and precision.

What dishes is it ideal for?

Sikitita is an EVOO clearly geared toward raw use and the most delicate cooking:
  • Gourmet salads
  • Tomatoes, burrata and fresh cheeses
  • White fish and shellfish
  • Steamed or grilled vegetables
  • Artisan bread
  • Dishes where the oil is the star
It is an oil to be enjoyed slowly, to finish dishes and to share with those who know how to appreciate the little details.
