Scallops vs Zamburiñas: What's the Difference?

Queen Scallops and Scallops: Similar, but Not the Same

Both are bivalve molluscs and may look similar at first glance. However, there are important differences. The scallop is larger, with delicate flesh and a generally milder flavour. The queen scallop is smaller, with a tender texture and a more intense flavour, combining delicate sweetness with a distinctive taste of the sea. And that is precisely part of its charm. A great Galician queen scallop concentrates all the character of the Atlantic into one small bite. That is why it is so highly prized in Galician cuisine and by those looking for gourmet Spanish preserves with real personality.

Wild Queen Scallops from the Ría de Arousa

Our wild Galician queen scallops come from the Ría de Arousa and are caught using the traditional fishing method known as “bou de vara”. Fishing respects the natural cycles of the sea, with the product carefully selected. Because when you work with an exceptional ingredient, the goal is not simply to produce more. It is to preserve it better. Then comes the craftsmanship. The queen scallops are prepared by hand, tin by tin and in limited quantities, avoiding industrial processes that could take away their unique character.

How Should You Enjoy Great Queen Scallops?

There is no need to overcomplicate things. Open the tin, serve them and let the product speak for itself. Pair them with good artisan bread and a glass of well-chilled Galician Albariño.
