Domecq: a surname, a brand, a lineage

The Domecq family arrived in Spain in 1730. A name intimately linked to the production of high-quality foods and wines, such as sherry and brandies. A knowledge passed down from parents to children. Always accompanied by their second passion, raising animals in freedom, such as 100% Iberian pigs. In 1970 Juan Pedro Domecq Solís began raising the 100% Iberian pig on his estate in Lo Álvaro, Seville. In an ambitious quest to create the most exquisite ham, Juan Pedro relied on various studies carried out in collaboration with several Spanish universities. The result is a unique variety: the 100% Iberian lampiño-mamellado pig. In 2000, with the support of his son Juan Pedro Domecq Morenés, he launched a market product of excellent quality, backed by all the experience in raising 100% Iberian pigs. Sadly Juan Pedro Domecq passed away suddenly in 2011, and his daughters, Teresa and Isabel Domecq, took the reins of the company to this day. A company of pigs of an almost extinct breed, the mamellado-lampiña, the best —the one their father had chosen in 1970 after much research that even involved the university— for producing acorn-fed 100% Iberian ham (for its ability to convert acorns and for fat infiltration). Not only did they keep the company going, they took it to the very top, positioning it in the segment of the most exclusive gastronomic luxury. Today, their selective limited production (only 3,000 pigs a year) is sold (a remarkable 70%) to countries around the world, and is especially appreciated in France, Italy, Singapore, Mexico, Thailand... And we hope that, with our development, Made in Spain Gourmet, also in the United States.

A distinguishing vision: internationalization

Teresa and Isabel did not come from the sector, but rather from the world of business consulting and legal advisory. But they had something that today is fundamental for Spanish companies that produce gourmet products: business vision. And little by little they began to change things, to rationalize the entire business system. Soon after they took a fundamental step for their development: internationalizing the company. That was almost 10 years ago, and the courage with which they decided to enter the international market moves us, and it is a source of pride to share that ambition to succeed beyond our borders. You can find their products from China to Mexico, Australia, Singapore, Thailand or the Caribbean, across the entire European Union, and we hope to continue expanding horizons — with the United States together with Made in Spain Gourmet. The production of their Iberian products is 100% in-house, hence their goal to control more and more of the development processes. That provides a brand value that has not stopped growing in recent years.

100% Iberian Mamellado-Lampiño breed

A unique, almost extinct breed selected by the founder, Juan Pedro Domecq, as the best for producing acorn-fed Iberian ham because of its ability to convert acorns and for fat infiltration. A breed characterized by small-sized pigs, lampiños (hairless), dark in color, with fine legs, and that present “mamellas” (a fleshy appendage at the front of the neck). That is one of the secrets why all Domecq products can be considered a true Spanish gastronomic luxury. On Made in Spain store you can find up to 12 references of their exclusive products, Iberian items such as presa de lomo, Iberian salchichón and chorizo, or caña de lomo. And of course their hams, whole pieces, deboned or hand-sliced and presented elegantly as the true gift they are, a pleasure to taste. The ham is impressive, cured in Cortegana (Huelva). One of the jewels of Spanish Iberian hams. This 100% Iberian Pata Negra Acorn-Fed Ham from Jabugo comes from the mamellado-lampiña breed, 100% Iberian, raised free-range in the Seville dehesa of Lo Álvaro. It has a minimum curing of 42 months — remember, that’s no less than three and a half years. That is why, when you get to taste it, you understand why it is the best product in the world. It has won the award for "Best 100% Iberian Acorn-Fed Ham" at the global "Great Taste Awards" on six occasions, so there is little more I need to add.
