Spain has a bucolic fall as varied as the number of regions that make it up. You can already be cold inland or be at the beach enjoying enviable temperatures in the Canary Islands. The range of seasonal products is incredible and the weather invites you to cook at home. Markets fill with the best seafood, the sought-after mushrooms, game season begins, and it’s the best time to enjoy preserves like northern albacore tuna. Also, we must not forget that it’s time for stews and creamy soups, soups, jams, the first braises and seasonal baking like pumpkin or chestnut pies, all well accompanied by red wines that remind us we live in the most wonderful country in the world. It’s wonderful to go to the market and find a good variety of different mushrooms that transport you to nature, because they’re not cultivated; they simply appear unpredictably in the forests. Robellones, porcini (boletus), chanterelles, black trumpets, ous de reig are our favorites to prepare in many ways, but they always share one thing: they elevate the other ingredients in the dish. They are a true delicacy. Sautéed with ham, grilled, roasted in the oven, steamed, in a scramble, or stewed and braised… Mushrooms are an authentic delight, a wonder for the palate, and the best thing is they adapt to all kinds of preparations. You don’t need to complicate yourself with very elaborate dishes to enjoy their flavor. Stew and braise recipes With the first rains and dropping temperatures our homely spirit awakens and we feel like bringing back the classic "puchero" (one-pot) recipes: soups, stews, and broths are the order of the day. Take lentils with chorizo, for example — a simple recipe fit for kings, or so it seems to me. Honestly, there’s nothing better than lentils to start the cold season; besides being delicious, they’re super nutritious when accompanied by a 100% Iberian chorizo slowly cooked, just like before. Undoubtedly one of my favorite fall dishes. Also, at this time of year you definitely feel like having a good bowl of creamy vegetable soup, piping hot to warm you up quickly and, above all, to get that amount of vitamins and minerals the body needs. Always include a few pieces of 100% Iberian ham, finely chopped — it will give it a spectacular flavor. Fall desserts For those with a sweet tooth, remember it’s walnut season — those small, flavorful ones. I love them with a bit of creamy cheese Alma de Calaveruela, quince paste (membrillo), or simply on their own, but if you pair them with chocolate — and if that chocolate comes in brownie form… I don’t need to tell you the result is amazing. One dessert recipe that couldn’t be missing is pumpkin pie, and of course apple cake. If there’s a time to make homemade cakes, it’s the weekend.
