This week we have begun the tirage for the 2019 cava, which consists of bottling the base wine and adding the tirage liqueur. This tirage liqueur is nothing more than wine and sugar used to carry out the second fermentation. The tirage liqueur is added to the base wine together with the yeast to provoke the second fermentation. We are very happy with the quality of the wines we have obtained. We believe they will be remembered as outstanding wines and cavas. The favorable weather conditions this year allowed us to reach the harvest with very healthy grapes. Spring rains and temperatures slightly lower than the average of previous years permitted a more gradual ripening, placing the grapes at peak quality. As a result, we obtained grapes with ideal alcohol levels and acidity for producing base wines for cava. Humidity and temperature conditions were ideal for achieving grapes with the optimal alcohol and acidity needed for cava base wines. Therefore, we can say that the 2019 harvest will be an excellent vintage, and after bottling and aging in our barrels — which will last between 24 and 60 months — we will produce cavas of exceptional quality. In this way, we will continue to convey to our customers that Vins El Cep remains committed to wines and sparkling wines of the highest quality, for the most demanding palates who want the best products. Let us remember that this year Vins El Cep celebrates its fortieth anniversary (1980–2020); accordingly, we will be celebrating this important milestone throughout the year, which drives us to keep improving year after year.
