The Green Soul of Ibérico: Tradition, Purity, and Flavor Without Artifice

At Made in Spain Gourmet we believe that true luxury is born from respect: respect for the land, for the animals, and for the heritage of a craft passed down through generations.
That’s why this week we celebrate two gems that embody the highest expression of tradition and innovation: the 100% Iberian breed organic hams from Beher (Guijuelo, Salamanca) and Señorío de Montanera (Dehesa de Extremadura, Badajoz).

Two houses that have elevated the art of Iberian ham to its purest, healthiest, and most sustainable version. Because Made in Spain is Quality.   Loncheado Jamón ecológico 100% Ibérico Bellota Pata Negra, Beher

Beher — D.O. Guijuelo, Salamanca

Organic Acorn‑Fed 100% Iberian Pata Negra Ham

The name Beher is synonymous with excellence.
On their dehesas, the 100% Iberian pigs roam freely, feeding exclusively on acorns, pasture, and certified organic products.
Their entire process — from breeding to curing — is designed to guarantee animal welfare, sustainability, and authentic flavor. Unique features:
  • Natural, slow curing in the pure air of Guijuelo.
  • Cured products using natural casings and no artificial preservatives.
  • 100% certified organic ingredients.
The result is a ham of ruby-red color, a melt-in-your-mouth texture, and deep aroma, with sweet and persistent notes.
A sensory experience that combines pleasure, health, and conscience. ✨ The highest expression of the Salamanca dehesa, where tradition merges with respect for nature.

Señorío de Montanera — PDO (Protected Designation of Origin) Dehesa de Extremadura, Badajoz

100% Iberian Acorn-Fed Organic Ham

In the heart of the Extremaduran dehesa, Señorío de Montanera pays homage to time and origin.
Its 100% Iberian pigs are raised in certified organic dehesas, fed natural feed before entering the montanera, where they enjoy the dehesa’s most prized fruit: the acorn. Its production is 100% natural, without additives or nitrites, which gives it a darker color and a deep, balanced flavor —between sweet and salty— full of notes of earth, air, and holm oak.
The ham rests for more than four years in cellars carved into rock, reaching a level of purity that makes it a unique and unrepeatable piece. The authentic taste of the dehesa, in its most honest and organic form.

A new way to enjoy the authentic

Organic Iberian ham is not just a delicacy: it’s a way of life, a way of approaching gastronomy through responsibility, health, and respect for the environment. Each slice tells a story of balance between the land and human know‑how. Because in excellence, less is more. This Christmas, choose the purity of the natural. Give the gift of flavor, origin, and commitment.
