And if we capitalize on it, it will be music to the ears of specialty retailers that Spanish food and ingredients have sparked consumer interest — especially among Americans, and in such a vehement way. Bidfood’s 2025 trends report states that they want to go deeper than the typical paella, explore more regional and specialized cuisine, and take the time to sample some Spanish pastries. Skyscanner points to San Sebastián, in northern Spain, as driving this trend, with more people than ever wanting to try the classic Basque cheesecake (Basque Cheesecake) and pintxos, small tapas-style snacks. Offering mussels labeled "Galicia Calidade" without being able to say they come from Galician raft farms is nothing more than an insult to intelligence and outright fraud. Quality cannot only be demanded, it must also be conveyed and communicated. And at Made in Spain Gourmet that’s how we do it.
