Israel Romero / Friday, May 31, 2024 / Categories: Blog Jaén: the land of extra virgin olive oil Jaén, synonymous with EVOO We were in Chicago (USA) last week at the most important gastronomy fair, and when Americans tasted our extra virgin olive oils they were surprised and asked how they could be so good — and not Italian!! Of course not. They were Spanish. There is one staggering fact. Jaén, one of the provinces of Andalusia, produces three times more olive oil per year than all of Italy combined. That says it all. Trying to count the olive trees in that land is impossible, since Jaén has more than 66 million of them. In fact, this province is home to the largest expanse of olive groves on the planet and the world's leading area for the production of extra virgin olive oil (EVOO). Not to mention the whole tourist and cultural fabric that has formed around and focuses on this fruit, because olive oil has much to offer. From the olive's juice arise gastronomic and cultural experiences related to wellness and nature, visits to olive groves and mills and a myriad of unique accommodations that allow the visitor to understand from within the importance of this crop. It's what is called, or oleotourism. In Jaén the Picual variety accounts for more than 90% of the oils produced in this land, although the Royal variety is native to the Sierra de Cazorla. The Arbequina is also increasingly produced. From the second half of October the olive is harvested and we obtain that liquid gold, intensely green thanks to chlorophyll. We have selected two brands that proudly come from Jaén: Verde Divino and Castillo de Canena. Enjoy them! [caption id="attachment_29268" align="aligncenter" width="800"] EVOO Picual Biodynamic, Castillo de Canena[/caption] EVOO Picual Biodynamic, Castillo de Canena It is the benchmark brand in Spain for EVOO, without a doubt. And the one others should look to in order to go far, as Castillo de Canena already has. The concept of biodynamic implies achieving the perfect harmonization between the different forces that govern Nature (seasons, weather phenomena, lunar cycles, etc.), the habitat and field work, which must not alter the natural environment surrounding an agricultural operation. High intensity of green olive fruitiness, olive leaf, tomato plant and aromatics such as spearmint or mint and artichoke. Balsamic. Notes of sweet fruits and red berries. An exceptional oil that will raise your dishes to the level of the best chefs. Excellent for salads and for finishing dishes.
