Sikitita

They are a cross between Arbequina and Picual.
  • Oil profile: Medium-fruity, balanced, with green and sweet notes. Smooth on the palate, without excessive bitterness or pungency. Ideal for those seeking a harmonious and approachable EVOO.
  • Tasting notes: Fresh fruit, olive leaf, green banana, sweet almond.
  • Culinary uses: Perfect for white fish, roasted vegetables, delicate salads, and gourmet pastries.

Koroneiki

  • Oil profile: Very fruity, with a high polyphenol content. It has an intense character, with herbaceous notes and a pleasant persistence on the palate.
  • Tasting notes: Fresh-cut grass, green apple, tomato, bitter almond.
  • Culinary uses: Ideal for bold dishes: red meats, aged cheeses, sauces, stews, or to give a powerful touch to salads.

Arbosana

  • Oil profile: Aromatic, complex, and long-lasting. Balanced between bitterness and pungency, with good structure.
  • Tasting notes: Tomato plant, green almond, ripe banana, with a slight spicy touch.
