networking and the smart communication we have created together.

These Galician siblings—he a biologist and she a chemist—were very clear that if they were going to carry out the
Isbilya project, it would be essential to create products that move people, and the Spanish
Premium EVOO sector needs rejuvenation, and they believe they can lead that field. We celebrate being able to do it together. As Spanish companies with the same objective should do. Because we share many affinities, for example not seeing agriculture as a traditional sector but as a model full of opportunities and in constant evolution, thanks to the enormous possibilities offered by Spanish gourmet products. International markets to explore, convince, and consolidate.
With more than 40 hectares planted in the heart of the
Aljarafe (Seville), they have an exceptional environment where they produce four olive varieties:
arbequina, arbosana, koroneiki and sikitita, all under one label: excellence. To that end they allocate significant resources to the care of their olive trees, always preserving the native fauna and flora.
Finding their own space
As nonconformists, an easy answer isn't enough for them. When it comes to excellent EVOO, Spain is without a doubt the global benchmark. But their production processes are not the same as most, and their obsession with very high quality is a differentiating factor. There we found another point in common with us: honesty. From the first moment we met, we felt that chemistry that always gives us a different sentiment: that of a “partnership.” Rowing in the same direction, making the journey together out of pure conviction in ourselves and the cause. Making Spanish EVOO recognized as the best in the world.
A lot of science and a single result: an excellent EVOO
When we say their way of working is disruptive compared to traditionalist companies, it's because their obsession with improving product quality while maximizing available resources is admirable. The experience they have accumulated through their studies and from research in many olive-growing regions around the world has been decisive in creating their own method for producing extra virgin olive oil. Their location,
Aljarafe (Seville), is an area of water scarcity, but their irrigation optimization thanks to a very sophisticated drip system has allowed them to improve the quality of the EVOO.
Other techniques—such as the
continuous hedgerow (provides greater accumulation of fatty acids and a homogeneous ripening state throughout the tree) and
'flight' olives (on the tree) positioned in the upper three quarters of the tree where the fruits that will produce the highest-quality oil are found—are other differentiating values.
International markets: their challenge, and ours
Our alliance is part of a beautiful project to
develop international markets, where the value of the brand as well as the product must drive differentiation compared to other EVOOs. The North American market will be one of the most important. Their personal experience in that country (they lived in California and know the market perfectly) and our customized channels in that market will make that bet the challenge to be achieved this year.
