Featured Recipe: Creamy Mushroom and Vegetable Rice with Albufera SIVARIS

Ingredients (for 4 people):

• 300 g Albufera Rice SIVARIS
• 1 liter vegetable broth
• 200 g mixed mushrooms
• 1 zucchini, 1 red bell pepper, 1 onion
• 2 cloves garlic
• Extra virgin olive oil (EVOO), salt and sweet paprika

Preparation:

1. Sauté the finely chopped onion, garlic and red pepper. Add the zucchini cut into cubes.
2. Add the mushrooms and cook until they release their juices.
3. Add the rice, stir in the sweet paprika and cover with the hot broth.
4. Cook over medium heat about 18 minutes, stirring gently to achieve a creamy texture.
5. Let rest 2 minutes and serve with a drizzle of EVOO on top.
