Caught during the spring fishing season in the Cantabrian Sea (FAO 27), the anchovies are carefully selected and undergo a slow salt-curing maturation process for between 10 and 15 months. The result is an exceptional product with deep flavor, a meaty texture, and incomparable elegance.
