Tasting note:
Appearance: bright golden color with amber gleams. Exceptionally fine, persistent bubbles rise with delicate effervescence to form a perfect crown.
Nose: its aromatic elegance stands out: clean, fruity and citrusy, with a hint of fresh almond characteristic of traditional cavas. A symphony of subtle yet perfectly identifiable aromas.
Palate: a pleasurable, generous, precious and refined bouquet. On the palate it is full and creamy, with flavors of fresh fruit and freshly baked brioche. A lively-tasting cava in which a silky sensation combines with a perfect level of acidity.
Served in wide, deep-bowled glasses, such as those used for tasting Chardonnays, it reveals the full complexity of its aromas.

Geology and Soil:
Gran Vintage Brut Gran Reserva comes exclusively from two plots: La Anciana and La Secreta. Their old vines bring greater terroir expression and complexity; balance and experience.
The vines in these vineyards are cultivated in the old-fashioned way and goblet-pruned, as winemaking tradition dictates. Their average yield is 5.500kg / ha, well below the 12.000 kg / ha authorized by the D.O. Cava. The grapes are harvested by hand and undergo careful selection in all Pere Ventura cavas; viticulture scrupulously respects sustainability and environmental standards.
Gran Vinatage Brut Gran Reserva is a limited-edition cava made only when the vintages are exceptional.
Pairing
At Made in Spain Gourmet, we start from the premise that it can be enjoyed at any hour, at any moment, always. On its own or accompanying the unique moments of your life.
Its complex, subtle balance makes it an exquisite companion to the most delicate and refined cuisine. Especially recommended with scallops, seafood, foie mi-cuit, 100% acorn-fed Iberian ham, and almost anything we choose.
Production:
Manual grape harvest and selection; each variety is vinified separately.
Whole grapes are pressed in a pneumatic press at a maximum pressure of 0.5 bar.
Fractioning of the free-run must to 50%, followed by static settling for 24 to 48 hours. Spontaneous fermentation with native yeast at a fermentation temperature of 15ºC. A careful blend of the two varieties is then made.
Clarification is gentle, with tartaric stabilization and final filtration.
The second fermentation takes place in the bottle itself, in accordance with the traditional method used for Champagne and cava.

Cava is synonymous with excellence, and achieving it requires authenticity. This is guaranteed by the entire production process, which at the same time offers different types of product—according to aging and sugar content—making Cava one of the most versatile beverages in the world.
In addition to the quality guarantee provided by the traditional method, a more demanding classification has been introduced with the categories of Cava de Guarda and Guarda Superior. All of this helps to better identify the origin and traceability of each of our little gems and to define more clearly the different Cava segments according to their aging. This unique classification places the D.O. Cava at the forefront of quality sparkling wines made using the traditional method.
Learning about its categories means entering a world of flavors and history… The history that cellar aging gives each bottle. The months of aging determine these categories, from Cava de Guarda (minimum 9 months) to Guarda Superior, with a resting period of more than 18 months (RESERVA), 30 months (GRAN RESERVA), or the highly prized Cavas de Paraje Calificado, with aging of more than 36 months.
In short, a wealth of options to enjoy—not only the quality of Cava, but also its endless pairing possibilities.
Types of Cava
Versatility is multiplied when we talk about the different types of Cava permitted according to the added sugar. Thus, within each category we can also choose according to type. From Brut Nature (with no added sugar) to Sweet Cava—ideal for a pleasant after-meal moment—we have countless options including Brut, Extra Brut, Semi-Dry and Dry. Gran Reserva and Cava de Paraje categories may only be offered in Brut styles (Brut Nature, Extra Brut and Brut).
