Some preserves simply preserve food. Others are created so that every element works together to deliver a complete gastronomic experience from the moment you open the tin.

In many of our Spanish gourmet preserves, olive oil is not there simply to preserve the product. It is there to accompany it, protect it and, above all, help it express its full flavour.

And achieving that requires balance.

Enhancing without overpowering: that is the difference

One of the great virtues of olive oil is its ability to complement the natural flavours of food without overpowering them.

This becomes particularly important when we are talking about ingredients as delicate as fine clams, razor clams, mussels or certain types of fish.

The oil gently envelops the product and acts as a genuine carrier of flavour. It helps the nuances of the fish or seafood gradually unfold on the palate, adds richness and prolongs the flavour, while allowing the main ingredient to remain the true protagonist.

With a great razor clam, we still want to taste the sea. With a sardine, its intensity. With tuna belly, that extraordinarily delicate texture.

The best oil is the one that enhances all of this without concealing it.

Sea and olive grove in the same tin

It is difficult to imagine a more Mediterranean combination.

Spain possesses two extraordinary natural larders: our seas and our olive groves. When exceptional seafood meets a fine olive oil, a very special balance emerges between the freshness and salinity of the sea and the smoothness, texture and vegetal notes of the oil.

But there is one essential condition: both must be of exceptional quality.

A great oil should never be used to disguise mediocre ingredients, just as outstanding fish or seafood deserves an oil that respects its individual character.

In the finest preserves, neither competes with the other. They complement each other.

And the oil left in the tin? Enjoy that too

Precisely because it is an integral part of the product, we should never leave that oil behind in the tin.

The oil has been in contact with the fish or seafood and has absorbed some of its aromas and flavours. Enjoy it with good artisan bread, drizzle it over toast or incorporate it into the aperitif itself.

Sometimes, an exceptional preserve needs absolutely nothing else.

Serve it at room temperature, add some artisan bread and accompany it with olives, almonds and a glass of white wine, vermouth or Cava.

In just a few minutes, you will have something profoundly Spanish and Mediterranean on your table: the sea, the olive grove and Mediterranean culture brought together around a shared meal.
