It’s not a trend, nor a pretty label. It’s a way of understanding the olive grove, time and absolute respect for the raw material. Early harvest is the harvest of the olive when it has not yet fully ripened, at its greenest moment. At that point, the olive yields less oil, but has a maximum concentration of aromas, polyphenols and freshness. Simply put: there is less oil, but much more character. To obtain a single liter of early-harvest EVOO you need approximately between 18 and 22 kilograms of olives, compared with the 4–6 kilos less that a late-harvest oil may require. That is one of the keys to its price… and its value. Why is an early-harvest EVOO more expensive? Because it is more difficult, riskier and less profitable in the short term.
