Product description
At Made in Spain Gourmet, we have selected El Paeller Black Rice because it makes it possible to prepare one of the great classics of Mediterranean rice cuisine at home, combining a rich seafood stock, cuttlefish ink, squid and Albufera rice with the convenience of an almost ready-to-cook meal kit.
Black rice, known in Spain as arroz negro, is one of the most recognisable dishes in Spanish coastal cuisine. Its characteristic dark colour comes from cephalopod ink, which gives the dish not only its unmistakable appearance but also a deep and distinctive seafood flavour.
El Paeller builds its recipe around one of the essential elements of any exceptional rice dish: the stock.
Its seafood stock is prepared with mantis shrimp, crab, traditional salmorreta, extra virgin olive oil and cuttlefish ink, following the brand's philosophy of using natural ingredients and cooking its stocks over a wood fire.
Salmorreta, a traditional Mediterranean preparation made with tomato, garlic and sweet paprika, adds depth and the characteristic flavour of rice dishes from Spain's eastern Mediterranean coast.
A particularly generous amount of squid is added to this base, accounting for 33.5% of the contents of the tin, together with prawns and mussels.
The result is a rich, balanced seafood base in which the ink, shellfish and squid work together to create the distinctive personality of authentic Spanish black rice.
The other essential ingredient is Albufera rice, a variety particularly valued for traditional dry-style rice dishes thanks to its ability to absorb the flavours of the stock while maintaining an excellent texture during cooking.
And behind all these ingredients is another defining feature of El Paeller: wood-fire cooking.
Cooking the stock over a wood fire adds depth and delicate nuances that bring the finished dish closer to the character of traditionally prepared Mediterranean rice.
Everything comes in a complete pack containing 1,000 g of seafood preparation and 200 g of rice, with the proportions needed to prepare the dish without making a separate seafood stock or buying the main ingredients individually.
In approximately 18 minutes, you can enjoy black rice with a deep seafood flavour and all the character of Mediterranean cuisine.
For Made in Spain Gourmet, this meal kit perfectly represents what we look for in a practical gourmet product: making preparation easier without sacrificing the authenticity of the recipe.
Excellent rice, authentic wood-fired seafood stock, cuttlefish ink and a generous amount of squid. A simple way to bring one of the Mediterranean's great rice dishes into your home.

Preparation and serving suggestions
El Paeller Black Rice is designed to make preparing authentic Spanish seafood rice at home simple, without having to make seafood stock or prepare all the ingredients separately.
The pack contains the right proportions of stock, seafood ingredients and Albufera rice to achieve a balanced result.
During cooking, the rice absorbs the flavours of the seafood stock, cuttlefish ink and squid juices, gradually developing the characteristic dark colour and intense seafood flavour of this traditional recipe.
The kit can be cooked exactly as supplied, as no additional ingredients are required.
However, it can also be customised by adding cuttlefish, squid or prawns if you prefer an even more generous seafood dish.
To complete the experience, at Made in Spain Gourmet we recommend serving it with a mild aioli, whose creamy texture and delicate garlic notes create a wonderful contrast with the rich seafood flavours and cuttlefish ink.
A few drops of lemon can also be added, although moderation is recommended to avoid masking the depth of the stock.
For wine pairing, it works particularly well with fresh Mediterranean white wines, Albariño, Godello or a good Brut Cava, whose acidity helps balance the intensity of the dish.
An especially appealing solution for anyone looking to prepare high-quality black rice with squid at home, using wood-fired seafood stock and carefully selected rice, without spending hours preparing every component from scratch.
