RH Gourmet 100% Iberian Acorn-Fed Folded Loin is an exceptional piece within the world of gourmet Iberian products. Made entirely by hand in southern Extremadura, it revives an old traditional recipe from Iberian pig slaughtering season, practically lost and historically reserved for special occasions.
Its unique production process turns this product into a true gastronomic rarity: the Iberian loin is gently marinated with salt and garlic, covered with a thin layer of white lard from acorn-fed Iberian pork, and then folded over itself before being stuffed into casing and hand-tied for curing.
This unique format gives the piece greater thickness, allowing for a slow maturation of more than 6 months that results in an extraordinarily juicy, tender loin full of nuance.
