To make a good vermouth, the first thing is to use a good wine. We use wine made from Albillo Real grapes, a very aromatic variety native to Spain. Intense yellow with golden highlights, clean and with pronounced legs. On the nose it is intense and complex, with plenty of fruit, very elegant. We add a fine selection of botanicals, herbs, and citrus fruits, chosen and combined in a balanced way, which we macerate naturally and without rushing. And we finish by sweetening it with Pedro Ximénez. The result... imagine it, or better yet, taste it.
