The Roi&Co mussels in escabeche are simply sublime.
At Roi&Co, their seafood is processed, cooked, and prepared by hand, tin by tin, in extremely small batches. Slowly, caring for every detail, by expert hands with decades of knowledge in the artisanal preparation of gourmet preserved seafood.
Only by following the traditional family recipe of Roi Lojo (Restaurante Punta Cabalo, lighthouse of A Illa de Arousa) do they achieve the unique and incomparable flavor of their tins of gourmet preserves. They never subject their product to any kind of automated industrial process, and they use no preservatives or added ingredients other than those that are natural and traditional to the recipe.

Sustainability and biodiversity
Roi&Co works closely with the Fishermen’s Guild of A Illa de Arousa to promote sustainability, biodiversity, and the survival of the species, the environment, and the industry and society to which it belongs and on which it has an impact.
Their packaging is made using certified and locally sourced materials and processes, and has been designed to be reusable. When it reaches the end of its useful life, it is separable and recyclable.
Ingredients
Mussels from the Ría de Arousa, olive oil, vinegar, onion, garlic, red pepper, bay leaf, peppercorns, clove, paprika, salt. 100% natural product.
Roi&Co does not use any preservatives, stabilizers, or other additives.
Canning, Quality, and Use
At ROI&Co, they close each of their tins individually through a mechanical and manual process to guarantee the best flavor and preservation. They do so using the highest-quality aluminum lids available. It is possible and natural for the sauce to rise to the surface when the tin is opened; this is because their canning process is manual and allows them to fill the tin completely so the product retains all its flavor, properties, and quality.
Price
Their product is subject to fish-market and market prices, so it may vary, directly affecting their costs and therefore being reflected in their retail prices.
ROI&Co uses only Galician raw material and represents excellence in size and quality, which limits our purchasing capacity.
Allergens
Contains mollusks.
Pairing
Best enjoyed cold to better appreciate its seasoning. Place the tin on ice or in the freezer for five to ten minutes before opening and serving. At Made in Spain Gourmet, we recommend it, of course, with a good white wine: Penedès, Verdejo, Albariño, or why not a premium cava or a red vermouth.
