The Protected Designation of Origin, or PDO, is a regulated quality seal that guarantees a product has been made according to a specific procedure in a specific region. This ensures exclusive, consistent quality across all products sharing the same Designation of Origin. In the case of Iberian shoulders and hams, from animals that comply with Iberian pig regulations, there are only 4 in the world.
