100% Acorn-Fed Iberian Shoulder Oro Pata Negra, Beher
Technical sheet:
Their pigs spend the first stage of their lives on the farm, feeding on natural cereals prepared on site until they reach a weight of between 40 and 50kg, when they are moved to the dehesa pasturelands.
There they enjoy an exceptional diet made up of this selection of cereals, as well as pasture grasses, tubers, roots and acorns, reaching 90/100kg by early October (when the montanera season begins), the moment when the acorns fall and become their exclusive food until they reach an approximate adult weight of 180kg. This is essential for preserving the Iberian breed and for the product to be called acorn-fed Iberian.
These Iberian hams, thanks to the breed that defines them and their exquisite diet, have an elongated, elegant shank with golden, fluid fat on the outside, while the inside shows a rosy, melting appearance that fills the mouth with intense, long-lasting nuances.
Tasting Notes
In our 100% Iberian Acorn-Fed Shoulder Oro we find a ruby-red tone, delicate marbling and a high percentage of oleic acid, which helps maintain an adequate level of cholesterol in the blood, as well as being rich in protein, vitamin B1, iron, zinc, magnesium, folic acid and vitamin E (an excellent antioxidant). On the nose, we recognize intense and pleasant aromas exclusive to 100% acorn-fed Iberian shoulder, true to its character and personality. On the palate, we appreciate an intense and persistent flavor with the characteristic sweetness of BEHER 100% Iberian acorn-fed Oro shoulder, due to a shorter salting period and long maturation, resulting in a healthier, more flavorful product that is pleasing to the palate.
