Castillo de Canena Cabernet Red Balsamic Vinegar 250ml – Artisanal Spanish balsamic vinegar

Discover Castillo de Canena Cabernet Red Vinegar, an artisanal balsamic vinegar that combines the richness of Cabernet Sauvignon grapes with the vinegar-making tradition of Jerez de la Frontera. Presented in a uniquely designed opaque white glass bottle, this vinegar stands out for its intense cherry-red color and complex aroma reminiscent of red berries, toasted notes and saline nuances characteristic of the region.

Origin and production

This vinegar is produced on our estate, where we planted red and white grape varieties to complement our Mediterranean triad: olive groves, cereals and vineyards. Every drop is acidified artisanally, following the technique of the master vinegar makers of El Majuelo, creating a vinegar balanced between sweetness and acidity that respects the natural character of the grape.

Castillo de Canena

Castillo de Canena takes its name from the family castle that stands on the hill of the municipality of Canena (Jaén). The company has a meticulous respect for the environment, reflected in its photovoltaic energy plants, a plant cover across the entire estate that reduces soil erosion and preserves native herbaceous vegetation, and the use of pruning remains as biomass, an environmentally friendly, non-polluting fuel. In addition, this Biodynamic EVOO holds the DEMETER certification for biodynamic agriculture. To obtain DEMETER certification, among other actions, Castillo de Canena has introduced sheep to the estate, produces its own fertilizers through composting, has enriched the plant cover by installing beehives, uses silica foliar preparations (ground quartz) instead of copper, and applies the various biodynamic preparations. Biodynamic Agriculture is a step forward from the ORGANIC cultivation method, based on harmonizing the different forces that govern Nature: seasons, atmospheric phenomena, lunar cycles, the position of constellations in the cosmos, seeking a holistic balance between the soil, the trees, the animals, and humankind.
