Pairing:

We would pair it with a Sherry or an amontillado wine and an assortment of nuts (such as walnuts, hazelnuts, almonds...). The result is perfect for an after-dinner gathering with friends or simply to get into the mood for enjoying autumn.

It can also be paired with extra virgin olive oils, honeys or jams.
Storage

The ideal temperature for storing the cheese is between 4 – 10 ºC, in a refrigerated place.

Los Vazquez

The story of Los Vázquez begins in 1927, when Ángel Vázquez was born into a hardworking and humble family. From an early age, he showed passion and enthusiasm for the family’s work while also displaying a special interest in business. Over the years, Ángel met Carmen, his future wife. It was the beginning of the Vázquez family, which would later create the cheese dairy. The family began by working in the bakery owned by Carmen’s father, and it was not until 1967, after receiving payment of a debt in the form of a herd of goats, that Ángel considered making cheeses by hand with the milk produced by these goats, and later began selling the cheeses to his neighbors and nearby villages, giving rise to what is now Quesos Los Vázquez. Passionate about cheese, for years Ángel embarked on the project of finding a way to refine production and define the quality his products should have. In 1972, Quesos Los Vázquez was registered as the first cheese dairy in Andalusia, thus closing the circle for a man who, with courage, ambition, perseverance, and above all great effort, managed to achieve his dream. Today, 50 years later, Ángel Vázquez’s grandchildren continue to work with the same enthusiasm and effort as their founder, with the goal of conquering new international markets through their cheeses, which are mostly goat cheeses—their distinguishing value.
