Product Description
The Acorn-Fed 100% Ibérico Vela Chorizo from Señorío de Montanera represents one of the most authentic flavours of Spain's Ibérico charcuterie tradition.
Its production begins with the careful selection of premium lean meat from 100% purebred Ibérico pigs raised during the montanera season, when the animals roam freely through the Extremaduran dehesa and feed primarily on acorns and natural pasture.
The meat is seasoned with paprika, garlic and selected spices following the traditional recipes of Extremadura. The chorizo is then slowly cured under carefully controlled conditions, allowing its aromas, texture and characteristic flavour to develop naturally.
When sliced, it reveals an attractive marbled appearance dominated by lean meat, with colours ranging from deep red to vivid purple and subtle reddish tones. Its aroma is warm and enveloping, while the palate reveals the characteristic notes of paprika and garlic traditionally associated with the matanza of Extremadura.
Its texture is particularly succulent. The natural intramuscular fat of purebred Ibérico pork melts delicately in the mouth, providing excellent juiciness, persistence and palatability.
At Made in Spain Gourmet, we select this chorizo for its combination of 100% Ibérico genetics, acorn-fed origin, traditional craftsmanship and the gastronomic identity of Extremadura.
It is supplied vacuum-packed and presented in a gift box.

What is a Protected Designation of Origin?
A Protected Designation of Origin (PDO) is a regulated European quality scheme linking a product to a specific geographical area and to production methods associated with that territory.
Spain has four PDOs specifically associated with Ibérico ham and shoulder:
Guijuelo PDO, in Salamanca; Los Pedroches PDO, in Córdoba; Jabugo PDO, in Huelva; and Dehesa de Extremadura PDO, in Extremadura.
The Extremaduran dehesa, with approximately one million hectares, provides an exceptional natural environment for the traditional extensive rearing of Ibérico pigs.
