Ingredients
- 500 g ripe vine tomatoes
- 400 g watermelon (rind removed)
- 1/2 onion
- 1 green pepper
- 1 small garlic clove
- 1 tablespoon Extra Virgin Olive Oil
- 2 tablespoons white wine vinegar
- 2/3 teaspoon salt
- 60 g shelled pistachios
- Feta cheese
- Fresh basil
Preparation
Chop the green pepper and the ripe tomatoes. Add the onion and the peeled garlic and blend everything until smooth. Add the watermelon cut into cubes and blend again. Add the Extra Virgin Olive Oil, the vinegar and the salt. Blend again until you achieve a very smooth and creamy texture. Serve well chilled. Finish by garnishing with lightly chopped pistachios, feta cheese cubes and fresh basil leaves.
