The pigs spend the first stage of their lives on the farm, feeding on natural cereals produced on site until they reach a weight of between 40 and 50kg, when they move into the dehesa pastures.
There they enjoy an exquisite diet made up of this selection of cereals, as well as grasses, tubers, roots and acorns, reaching 90/100kg by early October (when the montanera season begins), the moment when the acorns fall and become their exclusive food until they reach an approximate adult weight of 180kg. This is essential to preserve the Iberian breed and to be able to classify the product as acorn-fed Iberian.
When sliced, it shows a marbled appearance with streaks of infiltrated fat, soft golden tones and a red color that invites tasting.
Tasting Notes
At the end of its curing process, it passes through a chamber where holm oak charcoal burns very slowly, giving it a persistent, enveloping and unmistakable bouquet.
Its flavor combines the presence of paprika with a gentle touch of garlic, together with spicy and smoky nuances, providing a long and pleasant aftertaste.
