In the final months of the year, when harvesting is permitted, the Bou de Vara fleet returns to port with, among other catches, variegated scallops: its flagship product. This bivalve mollusk belongs to the same family as queen scallops and scallops, but has a more rounded shell and an orange hue.
Like other bivalves, it is a filter-feeding species that feeds on phytoplankton. It is rich in vitamins A and B, low in fat, and high in protein and minerals such as calcium, iodine, and phosphorus.
A treat to enjoy with all the senses, from the visual delight of opening the tin to appreciating its full flavor and texture on the palate. A gastronomic delicacy that pairs perfectly with aged dry white wines.
