Variety: 100% Palomino

Tasting note:
Old gold in color with greenish highlights. On the nose, aromas of bitter orange and toffee stand out, with notes of honey and a spicy background. Its concentration is reminiscent of Jerez brandy. Hints of toasted coconut, with bright acidity. An immensely long finish.
Serving temperature: 13-14º C.
Viticulture: Lustau owns two vineyards in the Jerez region: Viña Montegilillo, with albariza soils that are highly suitable for growing Palomino grapes, from which it obtains the musts used to produce manzanillas, finos, amontillados and olorosos; and Viña Las Cruces, near the coast, with sandy soils where Moscatel and Pedro Ximénez are grown for the production of sweet wines.
Winemaking: Oloroso VORS Lustau is a wine made from the Palomino Fino grape. Selecting the oldest soleras, over 30 years old, this oloroso comes from the casks with the greatest structure to undergo oxidative aging directly, fortified to 17% vol. alc. to prevent the flor veil from developing. The long aging process causes slight evaporation, concentrating the alcohol and, in some cases, reaching alcohol levels above 20% vol. alc.
Pairing: Mushrooms, roasted red meats, aged cheeses, aperitif, big game. Serve in a wide-rimmed glass. We recommend enjoying it slowly, appreciating how the wine evolves, along with its aromas and sensations.
