La Despensa D´Lujo

La Despensa D´Lujo is a company from rural Galicia dedicated to traditional farming in the Bergantiños region, in the province of A Coruña. They inherited their farm from past generations. From their grandparents they received not only the land, but also the care and dedication it requires. Today, the young farmers of Coristanco have moved beyond the potatoes and broad beans once grown first by their grandparents and then by their parents, introducing crops such as verdina beans, pink fabón beans, lágrima peas, lágrima chickpeas, chervil root and even the bean used for Galician broth, which was in danger of extinction. Their secret is sustainability: caring for the land where their legumes grow, connecting with the earth to give it the very best so that it responds in kind, just as their grandparents did. They farm in the traditional way, making the most of resources so that production remains sustainable, while at the same time constantly innovating. They collaborate with the Misión Biológica de Galicia, part of the Spanish National Research Council (CSIC), and also carry out their own field trials. All these crops are grown on their own land in Coristanco, although some neighbours also lend them plots free of charge simply so they do not fall into abandonment. It is a way of recovering the land and giving it value while helping to halt rural decline. The legumes from La Despensa D´Lujo are used in haute cuisine dishes by leading chefs such as Ricard Camarena, Iván Domínguez, Paco Morales, Rubén Trincado, Adrián Felipez, José Manuel de Dios, Carlos del Portillo, Juanjo López Bezmar, Manuel Costiña, Alberto Laredo and David de Jorge, the right-hand man of Martín Berasategui.
