Señorío de Montanera organic folded loin is an exceptional cured sausage made from 100% Iberian pigs fed on acorns and raised organically. This specialty is based on a traditional recipe from southern Extremadura, recovered from the region’s traditional pig-slaughtering heritage.
The preparation of folded loin begins by cleaning the external fat from the loin. It is made with the whole piece of organic acorn-fed 100% Iberian loin, which is then marinated with organic salt and garlic. Before being stuffed, it is covered with white fat from acorn-fed 100% Iberian pigs and folded in half, giving it its characteristic shape. It is then stuffed into natural casing and tied at six points with cords that play an essential role during maturation.
Its curing process is longer and takes place at a lower temperature to achieve the ideal point of maturation without preservatives or artificial additives. The expert hands of a Master Charcutier frequently supervise the condition of the pieces and tie the cords by hand.
This production process gives it exceptional juiciness and flavor, with a texture that melts on the palate. Señorío de Montanera organic folded loin has been internationally recognized for its quality, receiving the highest score at the Great Taste Awards.
To fully enjoy its organoleptic qualities, it is recommended to serve it at a temperature between 18 and 24 ºC.

Best-before date: It has no expiry date, but it is recommended to consume it within 12 months from the time of sale.
Storage conditions:
Instructions for use: Non-edible casing; remove before consumption. Open the vacuum packaging 15 minutes in advance. If the whole piece is not consumed, it is recommended to store it again refrigerated (below 7ºC) inside its original bag. Discard the first slice when resuming consumption. The optimal serving temperature should be between 18 and 24ºC.
