Chestnut honey is a single-flower honey with a fairly dark amber color. Its aroma is floral, although an herbaceous scent predominates, with a marked note of dry wood.

It has a sweet taste, though salty notes and even a hint of bitterness can be detected. Its flavor evokes the forest, as it is highly reminiscent of wood or resin.

USAGE TIPS:

• Thanks to its savory notes and intense flavor, it is ideal for combining with and adding to hot preparations featuring meat or fish.

• It is excellent for cooking, in different preparations, to enhance dishes and add value through its aromas.

• It is perfect for use especially in savory recipes, as it brings them balance.

APPLICATIONS:

• Add to sauces to accompany or serve with fish or meat. For example, honey and mustard sauces, soy-based sauces, lemon-based sauces to accompany white fish, red wine reductions with honey, etc.

• Add a spoonful to the sofrito for meat and mushroom rice dishes.

• Use especially to confit game meats. Marinate the product in honey for several hours and then confit it in its own fat. For example, make duck confit.

• Marinate meats or fish with honey (covering them with honey and spices, for example) and then cook as desired (sear on a griddle, cook at low temperature, oven roast, etc.). Examples include marinating fish such as tuna, cod, turbot, etc., and game such as rabbit, duck, etc.

• Dissolve a spoonful into the sauce of beef or pork stews.

• Drizzle over warm toast topped, for example, with goat cheese, sobrasada, caramelized onion, tuna, Roquefort- or Gorgonzola-style cheese,

Alemany 1879

Five generations of honey and turrón In the town of Os de Balaguer (La Noguera), under the watchful presence of Montsec and its exceptional sky, Torrons i Mel Alemany has built a universe of sweets. For five generations, the Alemany family has crafted artisanal turrón and selected honey from the finest beekeepers. The story of Turrones y Miel Alemany began at the end of the 19th century, when Mrs. Mundeta made a caramel with local honey and nuts. Since Montsec is a harsh and difficult land for cultivation, this activity offered them a valuable alternative. The distinctive character of Alemany turrón comes from a 19th-century recipe that gives the paste its characteristic white color. Slow cooking, locally sourced nuts, and a carefully selected rosemary honey are part of the secret behind the turrón’s distinctive flavor. Alemany has specialized in monofloral honeys, sourced from beekeepers across the country. Innovation at Alemany comes through the concept of honey with added value, in its gourmet honey line. Alemany turrón and honey have been recognized with Great Taste Awards on several occasions, an accolade considered the Oscars of the delicatessen food world. In recent years, the company has developed new gourmet products such as vinegars, spreads, and chocolates, helping the brand become present in more and more countries every day.
