Artisan Manchego cheese with Designation of Origin, made with raw sheep’s milk.

It has an ivory-colored paste inside and a light golden rind.

Its paste is firm, compact, and has excellent density. Its texture is slightly flaky, a sign of its superb aging.

Its aroma is intense, lactic, and floral, from the clean raw milk of Manchega sheep.

Pleasant flavor, intense yet smooth. With a distinctive, lingering aftertaste where its magnificent qualities come together and remain.

Every Manchego cheese is identified on one of its flat faces with a numbered and serialized casein plate.

Storage

The ideal temperature for storing cheese is 8–10 ºC. If we want to stop the evolution of the cheese and the molds on the natural rind, the temperature should be 4ºC. Best before: at least 8 months, although the shelf life is set at 12 months.

Spain is a land of cheeses, of every possible kind, but one that stands out with a personality of its own, and is unique to our country, is Manchego cheese. At Made in Spain Gourmet, we choose only the brands that guarantee the finest Manchego cheese, such as Ojos del Guadiana. With a Protected Designation of Origin (PDO), it is located in Daimiel, in Ciudad Real, in the natural setting of Las Tablas de Daimiel, surrounded by vineyards, almond trees and scrubland, typical Manchegan vegetation that gives the milk great flavor. The main characteristic of Manchega sheep is their ancestral purity, which has meant they have not been crossed with other breeds. The result is a unique cheese recognized all over the world.

Ojos del Guadiana is committed to promoting and proudly preserving the tradition of Manchego cheese, considered one of the best in the world for its very special qualities and its entirely artisanal production process. The entire cheese-making process is carried out entirely by hand by its expert master cheesemakers. The curd is placed into the molds manually, one by one, with gentle pressing at first and then increasingly intense pressure. The result? A select cheese that stands out for its elegance on the palate, its fruity character and its intense, lingering flavor. Ojos del Guadiana has the proper equipment to produce cheese with full health guarantees, meeting the approval criteria set by the European Union.

One example: To make 1 kg of cured cheese, between 5.5 and 6 liters of the finest milk are needed.
