Conservas Chanquete

Manuel Fernández, J. Miguel Giráldez, and Alejandro Iglesias are the creators of Conservas Chanquete. The idea came from Fernández, who, drawing on his executive experience in the fishing sector, identified a market niche for wild chanquete (Aphia minuta), a species that commands premium prices at fishmongers (€40/kg). His idea convinced the other two entrepreneurs, specialists in communications and financial services, and in December 2012 they founded the company. In March 2013, they launched canned chanquetes and piquillo peppers, a Galician interpretation of a traditional Andalusian recipe. Chanquete also gives its name to their company, Conservas Chanquete. From their very first preserve, Piquillo Peppers Stuffed with Wild Chanquete, to the present day, they have brought to market “different” gourmet preserves such as Hake Cheeks with young eels from the Miño River, white and green pochas beans with mussels and wakame from the Galician estuaries in seafood broth, piquillo peppers stuffed with mussels in seafood sauce, a line of fish and seafood pâtés, and, most recently, mussels in escabeche with Picual extra virgin olive oil and Albariño vinegar. The entire production process for their preserves is carried out in a completely artisanal way, from blanching and peeling the piquillo peppers to stuffing, preparing the sauces, and sealing the cans. For their sauces, they use top-quality fresh produce from the gardens of Navarra and Galicia, such as tomato, onion, garlic, leek, carrot, and more. The artisanal preparation of their gourmet preserves guarantees an exclusive gastronomic experience, with no preservatives or colorings.
