Bonito del Norte (Thunnus Alalunga)
Bonito del Norte (Thunnus Alalunga), also known as white tuna, belongs to the tuna family and is part of the culinary excellence of northern Spain, especially the Cantabrian coast. Thanks to its exquisite flavor and delicate texture, it is the preferred preserved seafood of the most discerning palates.
At the end of spring, Bonito del Norte moves into the waters of the Bay of Biscay, marking the start of the Costera, or Bonito fishing season, which usually ends in October. It is caught using selective fishing methods, one by one, with a hook, so the fish does not suffer and to ensure higher-quality flesh. This species is characterized by its large pectoral fins.
Its consumption is recommended by doctors and nutritionists due to its high Omega-3 content, which helps reduce cholesterol and triglyceride levels in the blood, contributing to a lower risk of cardiovascular disease.
