We are living through a very important moment for paella around the world. We are also immersed in a reality shaped by lack of time, or the difficulty of finding seasonal ingredients outside the Valencian region. A Fuego therefore becomes an easy, quick, and high-quality solution.
Wood-smoked Albufera rice. A broth slowly cooked with carefully selected local ingredients, A Fuego. Each box contains all the products needed to prepare a Valencian paella for 4 people in just 20 minutes. We recommend using a paella pan 38-42 cm in diameter.
CONTENTS
In each box you will find all the ingredients needed to cook black rice following chef Quique Dacosta’s recipe. It includes a pack of wood-smoked Valencian Albufera rice, a jar of slow-cooked homemade broth, and a second jar with the ingredients needed to cook black rice at home with cuttlefish, tender young garlic shoots, and baby octopus.
Each box serves 4 portions.

Water, octopus (21%), cuttlefish (15%), tender young garlic shoots (9%), rock fish stock (monkfish, gurnards and red scorpionfish, ribbonfish, mantis shrimp, sea bream, megrim, horse mackerel, dentex, small crabs, mussel, megrim and John Dory), brown crab, fried tomato sauce (tomato, tomato concentrate, sunflower oil, sugar, salt), garlic, salt, ñora pepper, natural flavorings.

Albufera Rice (D.O. Valencia)
The pack also contains an airtight sachet of D.O. València smoked rice of the Albufera variety. This is one of its distinctive features: the wood-fire note provided by smoking the rice over vine shoots, transporting the consumer to the purest and most desired moment of rice cooked A Fuego: the countryside, the firewood.
Instructions
Before you start cooking, bear in mind that this rice can be prepared on any stovetop. If you are using induction hobs, you should use a suitable pan with a diffuser base so that the heat is distributed evenly. We recommend using a paella pan 38-42 cm in diameter.
- Gently shake both cans.
- Pour the contents of the 2 cans into a 38-42cm paella pan.
- Heat over gas/induction/ceramic hob, stirring gently until it begins to boil.
- Add the contents of the bag of wood-smoked rice (400g), shake the pan to distribute evenly, and cook over high heat for 3 min.
- Cook over low heat at a very gentle simmer for approximately 16 min.
- Let rest for 5 minutes before serving.
PREPARATION FOR TWO
A Fuego rice recipes are designed to be cooked for four people. But they can also be used for two people, on two occasions. The secret is simple: just divide the rice, broth, and ingredients in half and add a little water.
Pairing: we recommend enjoying it with a sparkling wine or a well-chilled white wine. At Made in Spain Gourmet, naturally, we suggest a good white wine, Penedés, Verdejo, Alvariño, or why not a premium cava, a vermouth, or a frizzante such as La Mundial.
