Color: Rind coated with natural rosemary leaves, giving it a rustic and attractive appearance. Firm paste, ivory to straw-yellow in color, uniform and with hardly any eyes. It may show slight crystals, typical of proper maturation.
Aroma: Complex and intense fragrance, with predominant aromas of dried rosemary, countryside, and Mediterranean scrubland. Subtle sweet and floral notes from the honey balance the whole. Mature dairy background with hints of toasted nuts.
Flavor: Rich, deep, and well-balanced flavor between the intensity of the aged cheese and the gentle sweetness of the honey. The ideal temperature for storing the cheese is 8 – 10 ºC. If we want to slow the development of the cheese and the molds on the natural rind, the temperature should be 4ºC.
