100% Iberian Cebo de Campo Shoulder Ham – Beher, Guijuelo
Immerse yourself in the tradition and excellence of Iberian ham with this spectacular 100% Iberian cebo de campo shoulder ham from Beher. Made from the producer’s own Iberian-breed pigs, raised free-range in the dehesa pastures of Castilla y León, this ham represents the very best of Spanish gastronomy: intense flavor, elegant aroma, and an incomparable texture.
Origin and rearing
Each pig is raised with more than 100 m² per animal, feeding naturally on selected cereals, pasture, tubers, and roots, ensuring juicy, flavorful meat. This dedication and care in rearing is reflected in every cut of the piece, offering a unique gourmet experience.
Curing and organoleptic characteristics
The shoulder ham is traditionally cured for 18 to 24 months in natural cellars, where it develops its lingering aroma and balanced flavor:
- Appearance: long, slender shape, with ivory fat and bright cherry-red lean meat, abundantly marbled.
- Aroma: intense aroma with notes of walnut, wood, and delicate nuances typical of Cebo de Campo.
- Taste: smooth, long-lasting, harmonious flavor, with a slight sweet touch, low salt content, and a texture that melts on the palate.
Nutritional benefits
This shoulder ham is not only delicious, but also nutritious:
- High-quality protein: 31,8g/100g
- Healthy fats with oleic acid
- Rich in vitamins B1 and E, and minerals such as iron, zinc, magnesium, and folic acid
