What is jamón serrano?
Jamón serrano comes from white pigs, usually breeds like Duroc or Landrace. It is a traditional and widely consumed product in Spain, with a curing time that typically ranges between 12 and 18 months.
It is a more economical ham, with a pleasant flavor and perfect for daily consumption.
But it does not have the fat marbling, the aromatic complexity, or the silky texture of an authentic jamón ibérico.
Serrano is a good product. Ibérico plays in a different league.
What is 100% Acorn-Fed Iberian Breed Jamón?

100% Acorn-Fed Iberian Breed Jamón comes exclusively from pure Iberian pigs raised free-range in the dehesa and fed mainly on acorns during the montanera (acorn-fattening season).
That lifestyle, combined with the unique genetics of the Iberian pig, produces something unreproducible:
- natural fat marbling
- unctuous texture
- deep aroma
- long and elegant flavor
- notes of dried fruits and umami
That is the famous “Pata Negra”.

The 4 Denominations of Origin for Iberian Ham in Spain
Spain protects its best Iberian hams through four major Denominations of Origin:
Guijuelo (Salamanca)
Elegant and mild hams, with long curing times and great balance.
Dehesa de Extremadura
Aromatic power and an enormous richness of fat thanks to the Extremadura dehesas.
Jabugo (Huelva)
Probably the most famous DO in the world. Intense, deep and extraordinarily complex hams.
Los Pedroches (Córdoba)
Highly valued for their balance, sweetness and refined gastronomic profile.
Each area brings its own personality, but they all share one thing: excellence. The most important thing is to note that Spain doesn't have just one area producing 100% Iberian ham. There are no fewer than four areas, and very few people tell you that. We have products from all four Denominations of Origin.
Common mistakes when buying Iberian ham
Choosing only by price
A genuine acorn‑fed Iberian ham requires years of work, space, natural feeding and slow curing. If the price seems too cheap… it's probably not what it appears to be.
Not checking the label
In Spain, the color of the label is essential:
- Black → 100% Acorn‑Fed Iberian
- Red → Crossbred Acorn‑Fed Iberian (often crossed with Duroc)
- Green → Cebo de Campo (field‑fattened; can be 100% Iberian breed or 50%)
- White → Cebo (fattened on feed)
The black label is the highest category.
Buying industrial brands
Premium ham needs selection, origin and control.
Large industrial productions often sacrifice quality for volume.
Not understanding breed and diet
The difference between an intensively farmed pig and a free-range, acorn-fed pig is worlds apart.
